Premium Rotisserie Chicken Club
Preparation Time: 20 minutes
Ingredients:
2 Slices White Texas toast bread
1 Slice Brown Texas toast bread
4 oz. Maple Lodge Farms Shaved Premium Rotisserie Oven Roast Chicken
2 oz. Alfalfa sprouts
Grilled red pepper skin removed
1 Slice Swiss cheese
1 tbls butter or margarine
1 oz. Thousand Island dressing
salt and pepper to taste
Instructions:
Preheat bbq to 450 F. Cut a red pepper in half and put the skin
side down on the bbq and cook until the skin is slightly charred
and curling up at the sides. Remove from the bbq and put the pepper
in a glass dish covering with plastic wrap and let cool. When cooled,
remove the skin and discard it. Cut the pepper in half.
Butter one side of both slices of white bread and butter both sides
of the brown bread. Starting with the buttered side of the white
bread, spread 1 oz of alfalfa sprouts evenly across. Over the top,
arrange shaved chicken evenly. Place the brown bread on top and lay
across the two halves of the grilled red pepper and then one slice
of Swiss cheese and finish off with 1 oz of alfalfa sprouts spread
evenly and the last piece of white bread.
Cut the bread from corner to corner and add toothpicks to hold triangles
together. Place on a plate, attaching all triangles and serve with
potato salad or tossed salad with the Thousand Island dressing for
a side to spread on the club.
